Ingredients
- 1/2 white onion, finely chopped
- 1 large tomato, diced
- 2 garlic cloves, minced
- 1 1/2 cups white wine
- 2 tbsp tomato paste
- 2 cans Van Ecuador Tuna in Oil (5.3 oz each)
- 240g heavy whipping cream
- 400g rigatoni pasta
- 1 tbsp cream cheese
- Salt & pepper to taste
How to Make It
- Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
- In a large pan, sauté the onion and garlic over medium heat until soft and fragrant.
- Add the diced tomato and tomato paste, stirring until well combined. Cook for 2 minutes.
- Pour in the white wine, letting it reduce slightly to concentrate the flavor.
- Lower the heat and stir in the heavy cream and cream cheese, allowing them to melt into a smooth sauce. Season with salt & pepper.
- Gently fold in the tuna, breaking it apart slightly but keeping some chunks intact.
- Add the cooked rigatoni pasta, tossing to coat it evenly in the creamy sauce. If needed, add a splash of reserved pasta water to loosen the sauce.
