Ingredients

  • 1/2 white onion, finely chopped
  • 1 large tomato, diced
  • 2 garlic cloves, minced
  • 1 1/2 cups white wine
  • 2 tbsp tomato paste
  • 2 cans Van Ecuador Tuna in Oil (5.3 oz each)
  • 240g heavy whipping cream
  • 400g rigatoni pasta
  • 1 tbsp cream cheese
  • Salt & pepper to taste

How to Make It

  1. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a large pan, sauté the onion and garlic over medium heat until soft and fragrant.
  3. Add the diced tomato and tomato paste, stirring until well combined. Cook for 2 minutes.
  4. Pour in the white wine, letting it reduce slightly to concentrate the flavor.
  5. Lower the heat and stir in the heavy cream and cream cheese, allowing them to melt into a smooth sauce. Season with salt & pepper.
  6. Gently fold in the tuna, breaking it apart slightly but keeping some chunks intact.
  7. Add the cooked rigatoni pasta, tossing to coat it evenly in the creamy sauce. If needed, add a splash of reserved pasta water to loosen the sauce.
  8. Serve immediately, garnished with fresh parsley or grated Parmesan, and enjoy!
