Ingredients
For the Crispy Rice:
- 1 cup sushi rice, cooked and seasoned (see below)
- 2 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp salt
- Oil for frying
For the Toppings:
- 1 Van Ecuador Tuna in Vegetable Oil 5.3 oz, drained
- 1 tbsp mayo
- 1 ripe avocado, diced
- 1/2 ripe mango, diced
- 1 tbsp sesame seeds
How to Make It
1. Cook & Season the Rice - Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions. Once done, transfer to a bowl and mix in the rice vinegar, sugar, and salt while the rice is still warm. Let it cool completely.
2. Prepare the Tuna Mixture – In a small bowl, mix the drained Van Ecuador Tuna in Oil with mayo until well combined.
3. Shape & Fry the Rice – Form small, bite-sized portions of rice using your hands or a mold. Heat oil in a pan and fry each rice bite for 2-3 minutes per side, or until golden and crispy. Remove and drain on a paper towel.
4. Assemble the Bites – Top each crispy rice piece with the tuna mixture, followed by diced avocado, mango, and a sprinkle of sesame seeds.
